aftermarket touchscreen install?? whats involved?

If you have Onstar and steering wheel controls there are install kits that retain all these functions on Amazon. The kits are about $150 to retain both. If your Outlook does not have Onstar or steering wheel controls the cost goes down to $40.

Please document what you end up doing. We don't have an active Outlook member (well, now we do!).
Look up your system on Crutchfield. If there is a special connector to convert from stock wiring harness to the kenwood to avoid a hack job, they'll have it or tell you what it is.
Likewise, for linking the steering wheel controls, I'd think it comes down to the right cable with the correct plugs on each end.
