I have a 2000 LS1 that is jerking pretty good when it switches into first and second gears. It has over 100k miles. It is under warranty but they cannot see it until Monday. Anyone have any idea if it is safe to drive until then?

When the warranty is still in place, and being honoured by the dealership -- best bet is to let them do their thing, and don't mess with it. As far as driving between now and Monday, I'd go only if an absolute necessity ...
