4 bolt hub to a 5 bolt hub
to start, is your 03 a 5 speed?
If yes:
I do not know about a cavy.
I did the swap on my 04 5 speed with ion redline/cobalt ss(05-07) components.
Front 5 lug hubs are a direct bolt on. And the 5 speed axles fit in them. Also upgraded to the redline/ss front brakes. Also a direct swap for the front. Although real no benefit other than larger rotors.
Rear-I swapped the entire rear beam (otherwise you need to make some custom plates and weld them on) which gave me rear 5 lug along with rear disc. The rear beam had the hubs, rotors, calipers. Had to use rear brake lines from a redline/ss (just the soft lines) and the parking brake cables off a redline/ss.
Took me a few hours on my back, but not a bad swap.
Parts do not have to be off a redline/ss. Just what I had available. I mainly swapped for a set of wheels I got on trade.
Essentially, you could use a rear beam off an HHR/G5/later model cobalt that has rear drum if you wanted too.
Not a 5speed:
Then no clue. You would have to do some checking at the junk yard with hubs and axle splines. But a cavy rear beam should also work, as the early ions were basically built with left over cavy parts.

The bolt patterns might be different between an Ion and a Cav. They are different between an L and an olds Alero. The engines and transmissions interchange on those. The Ion Redline is the same pattern as the L at 5x110.
My Saturn is an auto with 16” 4 x 100 stud pattern. If I can switch to a 5 stud hub in either 16 or 15” stud pattern it will be easier to find a bead lock rim. I appreciate the advise on switching the rear.
